It is likely that this concerns the Elsie Mary Chubb who wrote "Our Bodies and how They Work: a Hygiene Reader for the Primary Course" because of the birth and death date, and the fact that she was a medical doctor from South Africa: it is unlikely that there is another Elsie Mary Chubb who also was a doctor in SA during the first decades of the twentieth century.
